If you are familiar with my recipes you will know that I like to make things easy. Being a busy working mum I enjoy incorporating energising, youthful and nutritious ingredients into quick meals for the whole family. I often stir fry vegetables as this cooking method retains most of the wonderful nutrients present in the veggies, and it means I can use one of my favourite fermented products; Tamari – a gluten free soy sauce.
150- 200g buckwheat soba noodles – I like ‘clear spring’
Boil a pan of water; add the noodles and boil for 5 minutes.
3-4 spring onions
1 medium to large red onion diced
1 quarter of a red chilli
3 cloves of garlic
optional: thumb sized piece of ginger
Dice these ingredients, add to a frying pan or wok and sauté in a little avocado oil.
100g cherry tomatoes
optional: any other vegetables suitable for stir fry e.g. broccoli, mange tout, peppers, bean sprouts
Add these ingredients to the onions, garlic etc. Then season with a pinch of Himalayan salt and a generous few splashes of tamari sauce.
optional: add a squeeze of half a lime and chopped coriander
more options: add egg and cook through or tofu for a vegan option
