Warming parsnip soup

Tis the time for soup! Soup is extremely nourishing and very underrated. In this age of convenience, many people do not make soup from scratch. I delivered sessions as a community nutrition volunteer whist completing my degree 10 years ago, and one of them was making vegetable soup. Without fail everyone was shocked at how easy it was to make soup. Try different versions and adapt to your tastes, you will find quite a few on this website.

Instructions
  1. Prepare vegetables, wash, peel, wash and chop parsnip and leek
  2. Add chopped vegetables including garlic to a pan and place on a medium heat, add spices then adding stock after a minute or so
  3. Bring to the boil and simmer for 20 minutes until vegetables are softened
  4. Take off the heat and add the lemon juice and dairy free milk, then blitz until smooth
  5. Will keep in the fridge for 2-3 days
