Instructions
  1. Fry off the garlic, onion, carrots until the onions are softened.
  2. Add cumin and chilli, stir
  3. Add all of the remaining ingredients.
  4. You may want to add a cup of water or two if the liquid is reduced too much for your liking.
  5. Bring to the boil and simmer for 20/30 minutes, or until the lentils are softened.
  6. Enjoy with sour cream and coriander – optional.
