Veggie Pearl barley risotto

This is a flexible dish, and you can replace the pearl barley with arborio rice, which I sometimes use too. You can also use any vegetables you like, swap and change, ideally in season, locally sourced, organic.

Instructions
  1. Dry fry (without oil) the onion and peppers/broccoli in the pan, if it starts to stick add a tiny bit of water and cook for a minute or so until softening
  2. Add the pearl barley
  3. Gradually add the stock to the pan, until the barley has softened Simmer for around 20-30 minutes - stirring occasionally.
  4. Serve with greens and enjoy.

optional: Beetroot peeled, diced and roasted Other options could include mushrooms, garlic, chilli, a tsp cumin, turmeric etc…
