Tofu veggie rice bake
A complete healthy meal, this delicious bake is a perfect batch cook recipe and can be portioned and frozen or will keep in the fridge for up to 3 days. With protein, complex carbohydrates, fibre and nourishing micronutrients it is a perfect meal for busy weeks. It is delicious too! It can be consumed cold as leftovers, or if reheating make sure it is piping hot (Rice is a high risk food with regards to bacteria growth).

Instructions
  1. Firstly boil the rice for 30 minutes or as package instruction, when ready drain and add to a medium to large oven proof dish
  2. Add the * ingredients in the blender and blitz until smooth - flavour to your taste, for example if you would like to add more Tamari, black pepper, or a dash of cider vinegar/cumin, or a pinch of sea salt etc.
  3. Mix the veggies, tofu mix and rice together in the oven proof dish and bake at 200 degrees celsius for 20-30 minutes, portion and enjoy with greens x
