Sweet potato falafels

Falafels are honestly one of the best inventions ever in my opinion. A traditional mediteranean dish that can be adapted in so many ways and they are so easy to make and suitable for freezing. So the perfect batch cooking busy person/parent go to. Falafels can be served with soup or salad, in a wrap or mason jar and so extremely versatile. Sweet potato is high in Beta carotene (vitamin A) for healthy eyes and skin, as well as lots of fibre to boost your immunity and contribute to a healthy microbiome and super health!

Instructions
  1. Blitz all ingredients in a blender or food processor and then shape into similar sized round pieces
  2. Place the falafels onto a pre lined baking tray and bake for 15-20 minutes at 200 degrees celsius Note: If you find the mixture too wet, you can mix in oats or another type of flour
Recipe Notes

Sweet potato can be swapped for beetroot in this recipe (or both can be added), there are many other spices that can be used e.g. turmeric and so enjoy experimenting.

Suggested serving size is 3 per person per meal
