Delicious wrap perfect for lunchtime. Prepare the day before to take to work or school or even make for a weekend lunch or brunch. Consuming a serving of beans a day has been associated with improved healthy and longevity, and chickpeas are a great source of fibre and protein. The mixture can be used as part of a salad too, and chilli or other spices can be added for a different flavour.

Ingredients
- 120 g chickpeas drained or soaked - mash with a fork
- half medium red onion chopped finely
- 5 cherry tomatoes chopped roughly
- 1 clove garlic chopped finely
- 1 lemon juiced
- pinch Pink salt and Black pepper
- 2 tbsp sweetcorn optional
- quarter medium ripe avocado mashed
- 2 wholemeal wraps 1 each person
- chipotle optional
- handful spinach add on top of filling

Instructions
- Heat the onion, garlic and tomatoes in a pan, add a little water if they start to stick, cook until softened
- Add the chickpeas (and sweetcorn) and seasoning to the pan, cook for a few minutes and then take off the heat and add the lemon
- Spread some avocado on the wholemeal wrap/s and then place the filling on the wrap - fold and enjoy
