This is an ideal breakfast, lunch, dinner, supper or actually just an any time snack!
You can adapt the flavourings and each time I make it I add different veggies and try different spices. Here is a basic recipe, feel free to add mushroom and tomatoes for a lovely breakfast, or roasted veggies and spinach or kale served with roasted sweet potato and fresh coriander for dinner.

Ingredients
- 300 g tofu
- 1 red onion or 2 shallots
- 2 garlic cloves
- 1 tsp cumin
- .5 tsp of turmeric
- cider vinegar just a dash
- pinch Himalayan or sea salt

Instructions
- chop the onion and garlic and add to a pan with a tiny stop of cold pressed oil e.g. olive or avocado
- once the garlic and onion starts to sizzle and you start to smell the garlic, add all of the other ingredients, roughly chop the tofu into the pan
- cook for a few minutes until the flavours have infused into the tofu and it is warmed through
- enjoy with veggies or salad items of your choice
