I often make pancakes and they vary in terms of the mix of ingredients e.g. types of flour. This delicious recipe was my most recent concoction, and used to create my daughters 14th birthday pancakes last week (as pictured). They were tasty, the perfect consistency and cooked just perfect, even the very first one (the first is the worst is a general rule when making pancakes). The best thing about pancakes is all of the toppings, when we have pancakes, an array of fruits, nut butters, coconut, cacao and more are displayed and enjoyed! To make the pancakes pink you can add a pinch of beetroot powder, or add cacao and or banana. I prefer to sweeten with fruit, but a little maple syrup for weekend pancakes can be great!
The raspberry compote on the image, is simply frozen raspberries cooked in a pan with lemon juiced.
