One pan veggie quinoa
Quinoa is a versatile seed, packed with protein and micronutrients, that you dont get with your usual grains. This as always is an adaptable recipe, you can use up your leftover veggies in this delicious dish. I have added the veggies I used as I made yesterday for a family meal, but these are optional to change for your preferences. Examples, broccoli, chopped greens, celery, carrots etc. Also, lovely with chopped chestnuts

Instructions
  1. Rinse quinoa
  2. Soften onion and garlic in a pan for a few minutes then add all the spices/herbs
  3. Add the quinoa into the pan, mix then add all of the veggies - add stock and simmer for approximately 20 minutes (Add the frozen pea and lemon juice a few minutes at the end of cooking) - serve and enjoy x
