Easy lentil loaf
I absolutely love my xmas loaf, but it can take a while to prepare. So for a quicker version, and a loaf you can make in batches and freeze. Lovely warmed and served with veggies, potatoes and gravy on a winters evening for the whole family, yum! As with most of my recipes you can adapt, adding mushrooms etc.

  1. 1. Line a small loaf tin (approx: 15/8cm) with baking paper
  2. 2.Soften the garlic and onion in a pan (add a little water if starting to stick)
  3. 3. Add the spices and seasoning to the pan - mix well
  4. 4. Add the rest of the ingredients to the pan and make sure all softened andcooked through (especiallly lentils)
  5. 5. Add to mixture to the loaf tin and bake in a preheated oven - 200 degrees celsius for approximately 45 minutes to 1 hour - take out and cool before slicing and serving
