Just baking through the lockdown! I have been making vegan scones and banana bread and doing doorstep deliveries to neighbours. After adding cooked apples to the last banana bread, I thought I would keep the apples whole and make into an apple loaf! Baked apple peels with cinnamon and sea salt sprinke is lovely x

  1. 1. Peel and chop apples, and cook on a medium heat until softened but apples are still holding their shape – just 2. Weigh and mix all the rest of the ingredients in a bowl then add the apple and mix through 3. Line a baking tin (my loaf tin is approx. 3 inches by 3.5 inches, but you could use a cake tin) and pour in mixture 4. Bake in the oven at 200 degrees celsius for approximately 1 hour
