Just baking through the lockdown! I have been making vegan scones and banana bread and doing doorstep deliveries to neighbours. After adding cooked apples to the last banana bread, I thought I would keep the apples whole and make into an apple loaf! Baked apple peels with cinnamon and sea salt sprinke is lovely x

Ingredients
- 100 g Spelt flour any flour will do, wholemeal is great!
- 100 g ground almonds you can use 200g of flour if no almonds
- 2 tbsp ground flaxseed/linseed optional, or can use other seeds
- 2-3 tbsp cocoa powder optional - can be vanilla x
- 1-2 scoops nutribuddy complete optional - adding extra nutrients
- 2 tbsp peanut butter
- 1 tsp baking powder
- 1 medium banana mash with a fork
- 1 tbsp cinnamon optional addition of nutmeg and or ginger
- 1-2 tbsp crushed walnuts
- 1 tbsp cider vinegar/lemon juice leave out if you haven't got
- 1 tsp vanilla extract leave out if you don't have
- 3-4 medium apples peel, chop and soften in a pan with a little water - medium heat
- 1 generous pinch sea/pink salt
- 50-100 ml dairy free milk
- 1-2 tbsp coconut sugar/maple syrup optional

Instructions
- 1. Peel and chop apples, and cook on a medium heat until softened but apples are still holding their shape - just 2. Weigh and mix all the rest of the ingredients in a bowl then add the apple and mix through 3. Line a baking tin (my loaf tin is approx. 3 inches by 3.5 inches, but you could use a cake tin) and pour in mixture 4. Bake in the oven at 200 degrees celsius for approximately 1 hour
