Cauliflower again? 🙂 As always I encourage you to use various ingredients to suit your tastes. I have added some alternative options for you to try. Enjoy clean cooking and experimenting.
Cauliflower Crumble Bake
Chop your veggies roughly and place them on a large baking tray then drizzle on olive oil (mix around to prevent sticking to tray). Place them in the oven (220 degrees celsius) for approximately 10-20 minutes until well roasted (not burnt).
Meanwhile, grate the cauliflower head and mix with the ground almonds and egg.
Place the roasted in a pan with the tomatoes/passata, puree and spices – cook until boiling. Mix well and cool to blend or place in the bottom of the baking dish.
Crumble the cauliflower mix on top of the veggies and sprinkle on cheese or nutritional yeast.
Place into the preheated oven for 30 minutes/until golden brown. Sprinkle with chopped basil to serve.
