Butterbean and spinach curry

I often make this for dinner during the week and enjoy leftovers for lunch at work the following day. The sauce is delicious – a definite new family favourite.

Instructions
  1. Fry off the onion and garlic in a tiny amount of water until slightly softened
  2. Add all of the spices – stir well
  3. Add all of the remaining vegetables and stock - boil for 10 minutes
  4. Add everything else from the list of ingredients
  5. Cook for a further 5 minutes
  6. Serve with brown rice or quinoa
  7. Enjoy
