Banana bread

So what do you do when your bananas go spotty and are starting to blacken? Well, it is rare that happens in my house I tell you, (we are banana obsessed) and so we have to make concious effort to leave them to ripen and beyond. Bananas are at their sweetest at this stage, and so perfect for freezing and making nicecream in a blender with a dash of dairy free milk and optional flavourings e.g. nut butter, raspberries, cacao, or even better making banana bread! This banana bread can be consumed as a tasty snack with a cuppa, or as breakfast. The high fibre and balance of plant protein and oats in this tasty bread means it is a perfect snack to keep you satiated, also contributing to amazing health and a healthy gut.

Instructions
  1. Mash banana, blitz oats and soak flaxseed
  2. Mix all of the ingredients together, adding a dash of dairy free milk until thick cake like texture
  3. Pour into a loaf tin lined with baking paper
  4. Bake in a preheated oven (200 degrees celsius) for approximately 1 hour - take out to cool for at least 30 minutes and enjoy. Cut into pieces and suitable for freezing
