Quick, simple and delicious treats for busy mums

We all love a sweet treat and as a parent, I have found one of the best techniques to keep our little ones healthy without feeling they are missing out is having some easy recipes, and even better cooking or preparing them together. My girls are both old enough to cook and bake and so if they feel like biscuits, nice-cream or a smoothie they can just make some themselves! The list of recipes here has something for everyone, some nut free, some with banana and some without -Perfect x
Oaty coconut biscuits

These are so tasty a huge family favourite, and the raw mix is so good you may want to eat some for breakfast before cooking the rest of your biscuits!
ingredients
makes approximately 20 biscuits

  • 150g oats
  • 100g chopped dates

*blend the oats and dates together then add into a bowl with the following ingredients

  • 50g desiccated coconut
  • 1 tbsp olive/avocado or rapeseed oil
  • 1 medium banana mashed
  • pinch of sea salt/Himalayan
  • 80ml Coconut milk or your choice of dairy free milk

*mix all of the ingredients together and shape into balls, pressing down slightly onto the pre-greased baking tray
bake in a preheated oven at 180 degrees celsius for 8 minutes, or until golden on the bottom

  • an option is to add peanut butter to top the biscuits x

Quick choco cream

This is a very quick plant-based dessert which is perfect for those times you just fancy chocolate and quick!

ingredients

  • 2 tbsp coconut cream (I use the top of the tinned coconut milk)
  • 1 tbsp peanut butter (sugar and oil free)
  • 2 tsp organic cocoa powder (sugar-free) or cacao

*mix together with a spoon and enjoy!
Nuttynana nice-cream

I made this when I didn’t quite have enough soaked cashews for a cream and so I mixed with a frozen banana. This makes a creamy delicious dessert, perfect for impressing guests or enjoying alone…
ingredients

  • handful of soaked cashews
    (cover cashews with plenty of water, cover and leave for a minimum of 2 hours or overnight)
  • half a frozen banana
    (I always have some bananas in the freezer for nice-cream – just peel half and place into a suitable container for the freezer)
  • a dash of cashew/almond milk
  • 1 tbsp of cashew or peanut butter (sugar-free or oil free)

*Blitz together in your blender
mint choc nice cream

Many people miss the mint choice chip flavour when going dairy free, this is a wonderful option for a minty dessert.

ingredients

  • 1 frozen banana
  • a quarter tsp of peppermint extract
  • 2 tsp cacao nibs

*blitz together in a blender – add a dash of dairy-free milk if difficult to blend

Silky choco bliss pud

If you want a rich creamy pudding, this is a perfect vegan choice, your friends will never know it is plant based.

  • 80g dairy free dark chocolate
  • 200g silken tofu
  • 1 tbsp coconut cream/tinned coconut
  • 1 tsp vanilla extract

*melt the chocolate and then blitz all ingredients together in a blender and serve

Do not underestimate the power of banana alone. Bananas are a natural sweetener and are a prebiotic, possessing nutrients to improve your gut health. My girls enjoy frozen banana just blitzed into a dessert, simple but perfect.

ingredient

  • 1 frozen banana

*blitz until creamy – if it is difficult to blend, add just a little dairy free milk
PassionAtely avonano pudding

This is my ultimate dessert, it never fails to provide indulgent self-care, especially when I serve into a lovely glass. yum!

ingredients

  • half a frozen banana
  • quarter of a ripe medium avocado
  • 1 tbsp cashew nut butter
  • 1 tsp vanilla extract
    optional: 1 tbsp cocoa powder

*blitz together until a creamy smooth dessert

Simple berry sweet treat

I often have berries as a dessert or snack, complete with compounds which improve our health and being very low in natural sugars they are the perfect treat. Adding cinnamon supports the balance of your blood sugars reducing sugar cravings.
ingredients

  • handful of berries (I often buy mixed frozen summer berries)
  • 1 heaped tsp of tinned coconut milk
  • sprinkle of cinnamon

*add the coconut milk on top of the berries
