Do something you love today!
I sometimes lose myself completely in doing and am currently really working on being. I find myself falling into old patterns and it is a practice to notice when this happens. Are you wondering about in a daze putting everyone else first? If you are, make a decision to do something you love to do today just for you. We can not help others and give our best if we are not the best version of ourselves.
One of the things I love to do is get in the kitchen and experiment, however, being midway into refurbishing this area of the house was a little bit of a challenge today. Nonetheless, I was not going to let this stop me! After a big clean up of the very little worktop space left, I checked the nearly bare fridge and cupboards and came up with this delicious sugar-free layered smoothie.
This healthy dish could be eaten at any time of day including breakfast, as it is packed with nutrients including; vitamin A for your skin and vision, iron and magnesium for calming and energy, vitamin C for anti-ageing, skin and immunity boosting, fibre for the digestive system, antioxidants to promote longevity and overall health and best of all natural probiotics to feed the good bacteria in your gut.
Phew! After all that, how could you not want to make it and best of all it is delicious, as stated by my two taste testers, my beautiful friend Julie and my teenage daughter.
- flesh of one medium pear
- 1/2 tsp of spirulina
- juice of half a lime
- 100g of coconut flesh/tinned coconut milk – cream part
- pinch of Himalayan salt
*simply blitz these ingredients together in a blender
- 3 tbsp of chia seeds
- 6 tbsp of dairy free milk e.g. almond/coconut/rice/oat
- optional 1 tsp of vanilla bean extract*mix these together and store in the fridge for an hour or overnight if more convenient
- 1 frozen banana – with a dash of dairy-free milk if required
*blitz in a blender
*Place each layer on top of one another and sprinkle cacao nibs and optional lime zest on the top
