This would serve 6 as an accompaniment for a picnic or meal, however if you want to use as a dip to a starter you may want to make larger quantities.
- a handful of basil
- 2 tbsp pine nuts
- 1 clove of garlic
- 1/2 tbsp extra virgin olive oil
- juice of a lemon
- a pinch of sea salt
Just blitz all ingredients together in a blender/food processor then store in an airtight container for up to a week. Gorgeous!

- Swap coriander for the basil and use lime to replace lemon
