PassionAte Pesto

This would serve 6 as an accompaniment for a picnic or meal, however if you want to use as a dip to a starter you may want to make larger quantities.

  • a handful of basil
  • 2 tbsp pine nuts
  • 1 clove of garlic
  • 1/2 tbsp extra virgin olive oil
  • juice of a lemon
  • a pinch of sea salt

Just blitz all ingredients together in a blender/food processor then store in an airtight container for up to a week. Gorgeous!

Enjoy experimenting with other pesto options:

  • Swap the pine nuts for cashews or walnuts
  • Swap basil with sundried tomatoes, spinach, cauliflower, roasted peppers, kale or try experimenting with other vegetables…
  • Swap coriander for the basil and use lime to replace lemon
