Garlic has been proven to reduce and prevent colds and flu! It is definitely a super food in my book!
Packed full of vitamins and minerals including vitamin C and B6, garlic has long been used for its health benefits throughout the world.
250g of mushrooms (any variety or mixed) – sliced
1 tsp of coconut oil
2 cloves of garlic diced
1/4 of a red/green chilli
thumb sized piece of fresh ginger grated/finely diced
120g couscous 2 handfuls of spinach
- Place the couscous in a bowl and add 300ml of boiling water – place cling film over the top of the bowl and allow the couscous to absorb the water.
- Heat the coconut oil in a medium saucepan over a medium heat and sauté the garlic, chilli and ginger for a minute until you can smell the garlic.
- Add the mushrooms and stir for 5-7 minutes until the mushrooms are golden.
- Lay the spinach on the plate, top with couscous and then the mushrooms.
