Energy Bars

These are a perfect snack for children or adults. They are packed with fibre and adding seeds will make sure you get omega 3 essential fatty acids. Experiment and use different dried fruits, coconut and a range of seeds. These are perfect for packed lunches, a batch can be made, cut up and wrapped in pieces of baking paper/foil and kept in an airtight container for up to 5 days.


  • 180g oats
  • 65g butter/coconut oil
  • 110g organic honey/rice malt syrup
  • 1 tbsp mixed seeds e.g. sesame, pumpkin, sunflower
  • 1 tsp chia seeds


  • 1 tsp ceylon cinnamon
  • 1 tbsp unsweetened coconut
  • 1 tbsp dried fruit
  • crushed walnuts

Melt the honey and butter/oil together (low heat) in a saucepan.

Then add all of the rest of the ingredients into the pan, stirring well with a wooden spoon.

Place the mixture into a baking tin and press down with a spoon.

energybar3Place in the oven and bake for 10 minutes. Remove from the oven.

Leave to cool before cutting into squares – store in an airtight container for up to 5 days.
