Instructions
  1. Chop your veggies roughly and place them on a large baking tray then drizzle on olive oil (mix around to prevent sticking to tray). Place them in the oven (220 degrees celsius) for approximately 10-20 minutes until well roasted (not burnt).
  2. Meanwhile, grate the cauliflower head and mix with the ground almonds and egg.
  3. Place the roasted in a pan with the tomatoes/passata, puree and spices – cook until boiling. Mix well and cool to blend or place in the bottom of the baking dish.
  4. Crumble the cauliflower mix on top of the veggies and sprinkle on cheese or nutritional yeast.
  5. Place into the preheated oven for 30 minutes/until golden brown. Sprinkle with chopped basil to serve.

Cauliflower crumble bake

Just when you thought I had stopped banging on about cauliflower it’s back! My apologies but my daughters disaster with the cauliflower pizza and the lovely flavours inspired this savoury crumble recipe. Didn’t the best inventions ever come to fruition out of mistakes?

1 cauliflower head
50g ground almonds cauliflower crumble bake1 egg
grated parmesan/ mozzarella or nutritional yeast to sprinkle on top
bake ingredients

3 cloves of garlic peeled and chopped finely
1 large onion diced
3-4 vegetables (handful) of your choice e.g. carrots, courgette, peppers, peas, sweetcorn, spinach/kale etc.roasted veggies
600-800g passata or chopped tomatoes
2 tbsp tomato puree
pinch of sea salt

optional: fresh/dried chilli, cayenne pepper or smoked paprika, black pepper
